Eggs, Spinach and Cottage Cheese on Sandwich Thins

This is a healthy alternative to your classic eggs benedict.  The eggs were dry fried in a non-stick pan.  After thoroughly washing the spinach, that was also dry fried in a non-stick pan.

  • 2 x eggs = 160 calories (80 calories each)
  • 90 grams of Spinach (roughly 3/4 cup) = 22 calories
  • 50 grams of Lite Cottage Cheese = 32 calories
  • 1 x Freya’s Soy and Linseed Sandwich Thin = 117 grams

Total Calories = 331

According to My Fitness Pal, Eggs Benedict with Ham from the Coffee Club has 934 calories.
